Since Tim doesn’t get to much into actual meal/snack preparation in The Four Hour Body, I’ve tried to come up with some healthy, easy snacks and quick meals.
Marinated Veggies
Cut up some Broccoli, Cauliflower, Bell Peppers, Cucumbers, Mushrooms, Squash, Tomatoes, & Onions into bite sized pieces. Feel free to use any veggies.
My personal favs: Broccoli, Cauliflower, Tomatoes, Cucumbers
Make the Marinade
3/4 Cup Olive Oil
1/4 Cup Balsamic Vinegar
2 Tablespoons Mustard
Optional: Cilantro or Favorite Spice
Salt and Pepper to taste
Shake it all together in a jar or whisk in a bowl. That’s all there is to it.
Throw the veggies in the marinade and let it sit in the fridge overnight covered. The veggies will soak it all up and they are great to eat raw. I usually make this about once a week and eat on it for 3-4 days.
